José Giraldo, the founder of Café 1959 in Quindío, Colombia has staked out a reputation in Colombia as a leader of the new fermentation movement taking ahold of the country, inspiring farmers, roasters, baristas and drinkers to adventure into new territories of flavor. We’ve been working with him since 2020.

Finca Las Marías has become José’s variety garden, sitting high above the town of Pijao at just under 2000 meters above sea level. There, he farms a rare strain pf Typica, as well as exotic classics such as Gesha and Mokka. For this lot, we chose José’s washed Wush-Wush variety. Wush-Wush arrived in Colombia about 30 years ago from the Wushwush region of southwestern Ethiopia in an attempt to diversify the Colombian coffee gene pool.

As is the case with many recently arrived Ethiopian coffees, cup profile is the name of game, with many interested parties looking to replicate the wild success of the Gesha variety, who’s florals and bright acids win competition after competition, year after year. Wush-Wush is replete with funky florals and juicy tropical fruits – If Gesha is the prom queen, Wush-Wush is the cool cousin with the piercings who was the first in the family to get into the Smiths. The anaerobic washed processing highlights and emphasizes the brightness and sweetness of this genetically special coffee.

All coffee is roasted to order every Monday and shipped the following day through USPS priority mail unless otherwise specified. Orders received on Mondays will be processed the following Monday.
