Washed Colombian coffee is basically a menu staple for the vast majority of North American roasteries, shaping the taste and expectations of hundreds of millions of coffee drinkers over the course of decades.

While somewhat ubiquitous, it’s important for the team here at Eastlick to not only offer a crowd-pleaser, but to find one that fits the bill of both appealing and uniquely attractive. Enter: Finca La Cumbre, our second offering this year from our friends at Osito Coffee Importers, who have gone the extra mile to find a coffee that checks off a lot of boxes. Approachable? Consistent? Differentiated? Impactful? Check x 4.

This offering is somewhat of an oddball: It’s a Caturra variety lot from a first generation farmer. In an industry where the average age of farmers only gets older as younger generations show preferences for other career paths in the city, Danilo Pérez took the chance on getting into something he had no generational guidance on. Maybe it’s the “outsider” insight that allows him to take a gamble on Caturra, instead of the much more common variety in Colombia called “Castillo,” a workhorse variety the dominates on well over 80% of all Colombian coffee farms.

This distinction in opting for Caturra is a deliberate choice to create a distinction between his farm and his neighbors’ farms, given that Huila is an absolute powerhouse for coffee production, and many farms tend to get lumped into the same categories when everyone in town is doing things the exact same way.

This lot specifically was hand-selected at peak ripeness, and after it was depulped and fermented for 30 hours, then rinsed and dried first on a patio, then finished in a mechanical silo dryer. The result in the cup is a great daily driver with a small “plus” of complexity that invites the drinker back for more! We expect to have two more months of supply, so go ahead and sink your teeth in!

All coffee is roasted to order every Monday and shipped the following day through USPS priority mail unless otherwise specified. Orders received on Mondays will be processed the following Monday.
