Washed Colombian coffee is basically a menu staple for the vast majority of North American roasteries, shaping the taste and expectations of hundreds of millions of coffee drinkers over the course of decades.
While somewhat ubiquitous, it’s important for the team here at Eastlick to not only offer a crowd-pleaser, but to find one that fits the bill of both appealing and uniquely attractive. Enter: Finca La Ceja, our first offering in years from our friends at Osito Coffee Importers, who have gone the extra mile to find a coffee that checks off a lot of boxes. Approachable? Consistent? Differentiated? Impactful? Check x 4.
La Ceja spans a total surface area of eight hectares and sits at 1,800 m.a.s.l. Each hectare is planted with approximately 6,600 3-year-old coffee trees. Nelson utilizes a washed process, which entails a period of dry fermentation or oxidation of the intact cherry as it comes in from the field, 12 hours in a metal hopper to be exact, after which the Castillo cherries were floated, any debris was sifted out and treated to another round of hand-selection of only the ripest cherries, after which the harvest was de-pulped and further fermented in a stainless steel tank for 24 hours, rinsed then dried in a solar dryer system for four to five days.
We have decent supply of this coffee! If you’re looking for a daily driver that you can sink your teeth into, this is the one! Should be around for a few months.
