Notes of raspberry, strawberry and a honey-like body are the big takeaways from this naturally processed coffee. Leaving the flesh of the fruit on the seed while is dries in the sun is the most traditional way to process the coffee and make it ready to drink. Do it wrong, and your coffee may taste like a corked bottle of wine or the rubbing alcohol you use to clean a cut. Do it right, and you’re tasting a coffee unlike anything you may have ever tasted. This coffee is the latter, and then some.

The Kossa Geshe farm is owned by Abdul and his brother Anwar, and sits in the highlands of the Kebena Forest, one of the last remaining protected dense forests in the region. Part of the success of the Kossa Geshe farm comes from a closely monitored nursery where baby coffee trees are cared after in the shade. There is a natural spring on the farm that provides an organic source of water. Couple that with year-to-year improvements of best practices on the farm by Abdul and Anwar, and you have an unrivaled coffee from western Ethiopia. Buy a bag and give it a shot.
